Toasted in Brussels
Brussel Sprout Toast
Sometimes I need a meal in a hurry, or I want to incorporate veggies in a breakfast treat. Heck, I’ve even been known to make this as a late-night snack which is where the inspiration really came from!
The truth is, everyone loves a good toast. I’ve been on a sourdough bread kick lately which has me prepping some fresh new treats like this one. I’ll keep this post brief.
Ingredients:
4-5 large brussels sprouts
2 pieces sour toasted dough bread
sharp cheddar cheese (1 Tbsp shredded)
1/2 lemon (1/2 tsp juice, zest)
butter, room temperature
olive oil (drizzle)
salt & pepper to taste
Instructions:
Chiffonade the Brussels sprouts and sauté in a pan on medium-high heat with some oil (avocado). Add salt and pepper to taste. Just before finished, shred cheese into the mixture, add 1/2 tsp lemon juice, and set aside.
Butter the sour dough toast and add veggie mixture to top. Top with lemon zest and a drizzle of extra virgin olive oil. What a treat!
